candied violets

 

you will need:

  • 1/2-1 c. fresh sweet violet
  • 1 egg white
  • 1/2 c. fine ground organic sugar 
  • 1 - 1&1/2 t. liquid 
  • paint brush
  • parchment paper
  • patience

gather fresh choice blooms (the largest and most "crisp" in appearance) pluck with about 2 inches or more of stem to allow for easier handling while processing and applying egg white.

process 1/2 -1 cup of them by spreading on a sheet of parchment or wax paper, allowing them to air for a half an hour or so. check for bugs. 

separate egg white out from 1 egg. add a little water if the white is thick. (i added approx 1 1/2 t. of lemon balm tincture for an added lift in spirits) blend the egg white, until bubbles start to appear but do not fluff.

lightly sprinkle each coated flower with a bit of fine ground sugar (organic pure cane run briefly through a coffee grinder or a mortar and pestle will do just fine).

place each bloom on a sheet of parchment paper and allow to air dry. (depending on your local climate this can take up to three days).
seal in an airtight container for up to 2 months. 

use to brighten deserts and to lighten your heart and brighten your day.
