Tzatziki Sauce

This is NOT a traditional recipe. 

This recipe is based on what we grow and what we like.  I have made 2 variations and both are very good.  Tzatziki Sauce can be used as salad dressing, dip, sandwich spread, marinade or anywhere you would put some sour cream.  Traditionally used on Gyro's, Falafel etc.

7-10 Medium Cucumbers
1 quart Plain Greek Yogurt
2 tablespoon Lemon or Lime Juice
2 large bulbs of Garlic (20-30 Cloves)
1/4 cup dried Oregano or Rosemary or Basil

Use a cheese grater to shred the cucumbers. 
I've made batches with seeds and without.  Both ways are equally good; the seeds are not very noticeable.  Sauce with seeds is a little thinner.

Throw the lemon or lime juice in the bowl with the cucumber

Peel the garlic cloves and run them through a garlic press over top of the bowl

Crush your chosen herb(s) and drop them in the bowl

Stir in the yogurt

Let it set in the fridge over night

Enjoy

This recipe makes a lot; about 2-3 yogurt containers full.
I recommend freezing leftovers in smaller sealable containers so you can bring it out in single meal quantities.
