CHESNOK RED
- hardneck - early/mid summer
a full flavored garlic with a mellow aftertaste that sticks around nicely for a while. Best baking garlic and a great all-around garlic.

ELEPHANT GARLIC - leek - mid summer
Elephant garlic (Allium ampeloprasum var. ampeloprasum) is a perennial plant belonging to the onion genus. It is not a true garlic, but actually a variant of the garden leek. It has a tall, solid, flowering stalk and broad, flat leaves much like those of the leek, but forms a bulb consisting of very large, garlic-like cloves. The flavor of these, while not exactly like garlic, is much more similar to garlic than to leeks. The flavor is milder than garlic, and much more palatable to some people than garlic when used raw as in salads.

MUSIC - hardneck - mid-summer
a flavor that ranges from spicy when raw to a hot and aromatic, true gourmet garlic flavor when cooked, and is considered to be the choice garlic of garlic lovers. A staple in a chef’s kitchen, It’s the perfect addition to soups, sauces, stir fries, marinades, rubs, dips and other recipes.

INCHELIUM RED - softneck - mid-late summer
a national taste-test winner in the softneck division. This mild flavored garlic is great baked.
Found growing on the Colville Indian Reservation in Inchelium, Washington. Light purple blotching on very large bulbs. Compound bulbs have large outer cloves as well as medium cloves in the center of the bulb.


SILVER WHITE - softneck - late summer
Originally a California strain from Harmony Farm Supply. This large bulbed garlic is similar to Mild French

METECHI - hardneck - late summer/fall
Its foliage is a deep dark green with a definite purplish haze and large, thick and healthy looking. If you love big, beautiful, bold and powerful garlic that  stores like a rock, this is the one for you.

ISLAND ROCAMBOLE - hardneck - late summer/fall
Similar to Spanish Roja, with a bit more heat.  The clove skins are very loose on Rocambole cultivars, often not even completely enclosing the clove. This can make for easy peeling in the kitchen, they also lead to the greatest disadvantage of Rocambole strains- shorter storage life than other varieties.
